Recipe: Green Goddess Bowl

A glorious green bowl that’s packed to the brim with goodness.

The variety of leafy greens in this recipe add immune-boosting antioxidants.

 

Serves 1

Total time: 10 minutes

Vegetarian and vegan option, dairy free, gluten free, refined sugar free

 

Ingredients:

  • 1 cup cooked brown rice or quinoa
  • ½ can butter beans, drained and rinsed
  • ½ small zucchini, sliced
  • 1 spring onion
  • Handful of brussel sprouts
  • 1-2 leaves kale
  • ½ tsp garlic powder
  • 2 tsp tamari or soy sauce 
  • Large handful of lettuce
  • ¼ avocado
  • 2 tbsp hummus, homemade or store-bought
  • (Optional) 1 poached egg or 30g feta cheese
  • Fresh coriander, black pepper and lemon, to serve

 

Method:

  1. Slice spring onions, zucchini, kale and brussel sprouts.
  2. Heat a non-stick fry pan and saute veggies with garlic powder and tamari until just soft.
  3. Assemble rice, beans, stir-fried veggies and lettuce in a bowl, then top with hummus, mashed avocado and coriander (and egg/feta, if using). Squeeze on some lemon juice and season with black pepper!
