Slice spring onions, zucchini, kale and brussel sprouts.
Heat a non-stick fry pan and saute veggies with garlic powder and tamari until just soft.
Assemble rice, beans, stir-fried veggies and lettuce in a bowl, then top with hummus, mashed avocado and coriander (and egg/feta, if using). Squeeze on some lemon juice and season with black pepper!
